Shaped Hamburger Buns
This takes more time and effort than the Quick n Easy method, but makes a uniformly shaped, smooth hamburger bun.
Directions:
- Prepare a light colored baking sheet by placing parchment paper on it, greasing it, or spraying with nonstick spray. Place 6-8 greased English Muffin Rings on the sheet.
- Let frozen loaf of Tracey's Treats frozen millet bread dough partially thaw on a surface which has been sprayed with nonstick spray or floured so the dough won't stick to it. Or, use Speed Thaw Method below.
- Using a sharp knife sprayed with nonstick spray, cut the dough into 6-8 slices (photo 1). The number of pieces the dough is cut into determines the resulting thickness of the bun.
- Place a piece of dough into each of the English Muffin Rings (photo 2).
- Grease or flour the bottom of a flat bottomed glass or container which is slightly smaller in diameter than the ring. Or, use nonstick sprayed plastic wrap over it.
- Press the prepared glass onto the dough, pushing down and twisting in a circular motion. This will spread the dough evenly and make a nice smooth top on the bun (Photos 3 and 4).
- Cover with a pastry cloth and let buns rise in a warm area, free of drafts, until the dough reaches the top of the rings (Photo 5).
- Bake hamburger buns in preheated 375° for 20-25 minutes, or until lightly browned.
- Let cool on rack (Photo 6), then remove rings.
- Slice horizontally (Photo 7).
Speed Thaw Method
Place frozen loaf of Tracey's Treats frozen millet bread dough on a microwaveable, nonstick surface, such as a piece of plastic wrap sprayed with nonstick spray.
Microwave loaf for 45 seconds, turn over, then microwave for 45 more seconds, or until just thawed enough to get a knife through the loaf with a little effort. Note: microwave times may vary depending on wattage; don't microwave too long or the dough will become too sticky to work with easily and may also start to cook.
