Directions:
- Preheat oven to 200°, then turn it off, if letting buns rise in a warmed oven..
- Prepare a light colored baking sheet by spraying it with a gluten free cooking spray, or by lining it with a silicone baking pad or parchment paper.
- Mix up Tracey's Treats Millet Bread Mix as directed.
- Place a gallon size freezer bag over a 6 inch diameter bowl, or have someone hold the bag open. Spoon the batter into the bottom of the bag (photo 1).
- Cut a 1.5 inch diameter hole across a bottom corner of the bag. Twist the top of the bag tightly above the dough, gently forcing the dough into the corner of the bag with the hole (photo 2).
- Grasping the bag firmly, pipe out the buns by squeezing with constant pressure, until each bun is about 6 inches long and at least ½ inch apart. (End each bun by a twisting motion, or use a knife to cut off the flow.)
- Place buns into warmed oven to rise for 15 minutes, or let the buns rise for about 30 minutes at room temperature (photo 3).
- If rising in warm oven, take buns out of oven after 15 minutes and then preheat the empty oven to 400°.
- Place risen buns in preheated 400 ° oven for 20 minutes on second shelf down, covering with foil after the first 15 minutes to avoid over-browning , if necessary.
- Remove buns from baking sheet and let cool on a rack. Covering the buns with a towel while they cool will keep them soft.
- To regain the fresh, soft texture on the next day, microwave the bun for about 20 seconds.
1 package of Millet Bread Mix yields 6-7 hot dog buns. (Photos 2 and 3 represent 2 pkgs. of Millet Bread Mix combined.)
TIPS: 1. You can make larger buns, such as sausage rolls, by simply making the size of the hole in the bag larger. Decrease the size of the hole to make soft breadsticks. Brush baked breadsticks with melted butter and sprinkle with garlic powder and/or garlic salt, if desired.
Baking time may vary according to the thickness of the rolls squeezed out, ie. 10-15 minutes for breadsticks versus 25-30 minutes for sub rolls..
2. Oven temperatures can vary. If your hot dog buns fall after cooling, they need baked a little longer the next time. If the buns are too firm, they need baked a little less.
